A Countryside Christmas at The Pebble & Holly Collective
There’s a particular kind of magic that settles over the countryside this time of year, somewhere between the first curl of chimney smoke against a frosty sunrise and the hush that falls over the fields right before snow begins its gentle descent. Here at The Pebble & Holly Collective, we feel that magic tucked into every corner of our little shop.
The festive season has officially arrived, and with it comes the sort of delightful chaos we secretly look forward to all year. Our shelves are brimming with handmade ornaments, winter-warmed ceramics, woollen bits and bobs, and all the tiny treasures that make for meaningful gifts. If you step through our door at any point this month, you’ll likely find someone bustling about with ribbon in their hair, a kettle whistling in the back, and a queue of cheerful neighbours swapping stories while we wrap their parcels.
It’s busy, beautifully, wonderfully busy, and we wouldn’t have it any other way.
Between the decorating and the crowd of visitors popping in for gifts and a warm chat, we’ve also been making time for one of our favourite traditions: countryside Christmas baking. We thought we’d share one of our simplest, sweetest recipes perfect for sharing with loved ones or wrapping up as a little homemade gift.
Countryside Christmas Spiced Orange & Cranberry Scones
Rustic, cosy, and just the right amount of festive.
Ingredients:

2 cups plain flour

1/4 cup sugar

1 tbsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/4 tsp nutmeg

Zest of 1 orange
-
1/2 cup cold butter, cubed

1/2 cup dried cranberries
-
1/2 cup milk (plus a splash for brushing)

1 large egg

A sprinkle of demerara sugar (optional, but very recommended)
Instructions:

Preheat your oven to 200°C (400°F) and line a baking tray with parchment.

In a large bowl, mix the flour, sugar, baking powder, salt, cinnamon, nutmeg, and orange zest.

Add the cold butter and rub it into the flour with your fingertips until you get a crumbly, pebbly texture.

Stir in the cranberries.

Whisk the milk and egg together, then pour into the dry mixture. Stir until just combined—rustic lumps are encouraged.

Turn the dough onto a floured surface and gently pat it into a round about an inch thick.

Cut into 6–8 wedges and place on your baking tray.

Brush the tops with a little milk and sprinkle with demerara sugar for that golden sparkle.

Bake for 15–18 minutes, or until lightly golden and fragrant.
Serve warm with salted butter, clotted cream, or a drizzle of orange honey. They make the shop smell heavenly when we bake them before opening.
